Ingredients Serving Size: Approximately 4 servings.
Amaranth (Rajgira) flour - 1 cup
Jaggery (or any sweetener of your choice) - 1/2 cup
Ghee (clarified butter) - 1/4 cup
Cardamom powder - 1/2 teaspoon
Chopped nuts (almonds, cashews, and pistachios) - 1/4 cup
Raisins - 1/4 cup
Instructions:
In a pan, heat ghee over low heat.
Add chopped nuts and raisins. Roast until they turn golden brown. Remove from the pan and set aside.
In the same pan, add amaranth flour. Roast it on low heat until it turns aromatic and slightly changes color. Be careful not to burn it.
add jaggery (or sweetener) and cardamom powder once the flour is roasted. Mix well until the jaggery melts and blends with the flour.
Add the roasted nuts and raisins to the mixture. Mix until everything is well combined.
Turn off the heat and let the mixture cool down slightly.
While the mixture is still warm, use your hands to shape small portions into ladoos (round balls).
Repeat until all the mixture is used up and you have formed all the ladoos.
Allow the ladoos to cool completely before storing them in an airtight container.
